Our winemaker David Tofterup visits each vineyard
to select specific blocks and determines when each is at optimal
ripeness. From the mid of August the grapes were harvested at
night by machine. The cold temperature of night preserves the
natural acidity and aromatic characters of the fruit.
The grapes were gently crushed and placed into
Pneumatic presses were the must was macerated for three hours
during slow pressing. The free-run juice was pumped to stainless
steel tanks where it was cold settled and racked off the lies
after 24 hours. Following fermentation the wine was racked off
the heavy lies and aged on the fine sur lies for 3 months. During
this time the sur lies was stirred periodically by the use of
nitrogen gas. This refreshing white wine was bottled after gelatine
and bentonite clarification and filtration in early spring.
