Daniel Gimenez has collaborated with David on
Flor del Montgó Old Vines Monastrell since 2004
and now assists with other wines in the Collection.
As a French enologist, Daniel offers a winemaking
style influenced by his French roots and his participation in
Chilean, French and Californian harvests. As an advisor in enology
for Chilean wineries Viña Santa Carolina, Curicó
and Bodega Lomas de Cauquenes, Valle del Maule, Daniel worked
with international varieties such as Chardonnay, Merlot, and Cabernet
Sauvignon. But his French roots and love for the Pinot Noir grape
drew him to Spain´s Monastrell grape, an equally challenging
grape that needs the gentle attention as the Pinot Noir.
A shared philosophy of letting the pureness
of the grape dominate the wine, Daniel assists David by controlling
the daily maintenance of the wines from the different
regions.
