Old Vines Bobal Rosé

Our winemaker David Tofterup visits each vineyard
to select specific blocks and determines when each is at optimal
ripeness. Handpick from the best old vine Bobal in October when
the desired balance between sugar and acidity was achieved.
The grapes were gently destemed and crushed
and the must was cold macerated on the skins at 8ºC in stainless
steel tanks. After approx. 12 hours of maceration the juice was
racked off the skins and cold settled for 24 hours before racking
the juice off its heavy lies. The wine underwent temperature controlled
fermentation by use of selected yeast strains (14-16ºC).
This delightful rosé wine was bottled after gelatine and
bentonite clarification and filteration in early spring.
